Spinach-Mushroom Baked Cod
1-1/2 lb cod filets
2 cups whole fresh baby spinach leaves
½ cup fresh baby spinach, well chopped in a small food processor
½ cup sliced mushrooms
½ cup grated gouda cheese
Salt
Pepper
2 crushed garlic cloves
2 tbs butter, melted
2 tbs flour
2 tbs breadcrumbs
1 egg
Dill weed
Crushed mint
Cilantro
Lemon juice

Season the cod filets with salt and pepper, garlic, cilantro, mint and dill weed (sparingly with the dill and mint)

Place half of the cod filets in an oiled 8x8 baking dish

Spread about half of the spinach evenly over the filets.

Layer the mushrooms evenly over the spinach

Sprinkle the grated cheese evenly over the mushrooms

Spread the remaining spinach on the mushrooms

Place the rest of the filets on the spinach

Melt the butter and whip into it the flour, breadcrumbs, egg and chopped spinach

Spread this mixture over the filets

Bake at 450° for 20-30 minutes, until filets are completely cooked

Garnish with lemon twists and parsley
