Dave’s Peach
(or Strawberry) Parfait


• 1 quart of Vanilla yoghurt
• 4 medium sized fresh peaches
• (or 1 cup of strawberries, or another fruit you prefer)
• 1 package of Knox unflavored gelatin mix
• Cinnamon
• Honey
• Mint leaves
• Nutmeg

1. Peel, pit, and dice 3 of the peaches – pit and slice the other one into 12 wedges
2. Divide the yoghurt in half, and set aside.
3. Dive the unflavored gelatin mix in half
4. Puree the diced peaches or strawberries, and mix with half of the yoghurt
5. Stir in half of the gelatin mix (this helps ‘set’ the parfait so it’s not runny) in the mixture containing the fruit, and the other half in the un-tampered with yoghurt
6. Spoon into 4 parfait glasses, alternating vanilla, peach, etc – about 4 layers ending with the peach layer on top
7. Garnish with the previously sliced peach wedges (3 per glass), stick a sprig of mint leaf in the center, sprinkle with cinnamon and nutmeg, drizzle with honey, and let set until firm – a couple of hours should do it.  Serve chilled
