Dave’s Delightful Chili

• 12-16 Roma Tomatoes – diced (you can substitute canned, but I prefer fresh)
• 1 large onion, diced
• 4 stalks celery, diced
• 3 cloves Garlic, crushed
• 2-14 oz cans small red beans (again, you can get dried beans and soak them first, which I prefer)
• 1/4 to 1/2 cup chili power
• Salt to taste
• Pepper to taste
• 1 1/2  pounds lean ground beef
• Water as desired
• Optional green chili’s to taste if you like the really hot stuff.

1. Fry the ground beef, draining the fat off.  Place in a large sauce pan or 5 quart crock pot.
2. Rinse the beans and add to the sauce pan or crock pot with the remaining ingredients. If a more soupy chili is desired, add water.

3. If you’re using a large sauce pan, bring it to a boil and reduce heat to simmer for about 30 minutes.

4. If you’re using a crock pot, cook on high until it is boiling and reduce the setting to low, continuing to cook for 3 or 4 more hours.

5. Serve with crackers and grated cheese.  I prefer Gouda or Cheddar.

NOTE:  When really motivated, I substitute dried red beans I have soaked overnight for the canned beans, and an equal amount of diced fresh roma tomatoes.  When less motivated, I have occasionally also used a canned chili mix (such as Bush’s) as a starter.

You can also half this recipe for smaller needs.
